Historical tips: the cellar – where wine
is produced, stored and sold – is located in an ancient manor
house (which dates from the XV Century) surrounded by the estate
(vineyards).
The vineyards of Azienda Agricola Novaia are situated between 250
and 300 metres above sea level, facing South and South-East. The
vineyard cultivated area measures 7 hectares. The traditional vine
growing technique called “pergola” has been almost completely
substituted by the so-called “spaliera” (“guyot”)
technique which allows an improvement in the quality of grapes,
thanks to a greater density of structure, a better sun-exposure
and a smaller production of grapes per hectare.
Grape varieties cultivated by Azienda Agricola Novaia are the following:
Corvina Veronese 50%, Corvinone 30%, Rondinella
20%. To the three mentioned varieties has recently been added Oseleta,
an historical and endemic variety from Valpolicella which was lost
during the last fifty years.
The cellar has been recently restored and renovated both in structures
and equipments, realizing, in this way, a perfect “marriage”
between past and present, between tradition and technology.
Tasting Notes: A Valpolicella for all courses, fragrant nose with delicate
flowery and slightly fruity perfumes, together with hints of spices. Grape varieties: Corvina 50% Corvinone 20% Rondinella 30% Food Pairings: A wine for all courses. Thanks to its freshness it is excellent
as an aperitif and paired with starters, pasta and Mediterranean
soups; white and cold meat, baked or grilled fish; grilled and steamed
vegetables. Thanks to its structure and intensity it pairs well
with grilled, stewed, roasted or braised red meat and poultry. Absolutely
delicious with chestnuts. The cuisine of Veneto recommends "Sopressa
fresca", "Riso e bisi", "Riso e bruscansi",
"Bigoli con le sarde", "Pasta e fasoi", "Polenta
e renga", "Polenta e baccalà", "Frittata
con erbe aromatiche ed odorose", "Caldarroste e peladei.
Tasting Notes: In January it is refermented on sweet and alchoolic skins
of Amarone: this his the tipical “ripasso” method. This
wine ages for 24 months in barrique and 12 months in bottle. The
colour is deep ruby red. Clear and intense perfume with hints of
spices and notes recalling double fermentation on Amarone skins
(“ripasso”). Good alcoholic content, medium-low acidity,
medium tannic features. A wine with body and structure, tasty, persistent
and good balance. Grape varieties: Corvina 50% Corvinone 20% Rondinella 30% Food Pairings: Tradition recommends typical Italian appetizers, pasta,
rice and country soups, dishes with truffle, grilled, roasted or
braised red meat, poultry, roast lamb, stewed, or sauteed vegetables;
hard and semi-hard cheese with medium-long ripening, tasty but not
strong. Very pleasant with are cooked meat.
Valpolicella D.O.C. Classico Superiore Vigneto
I Cantoni
Tasting Notes: This cru of Valpolicella has clear and intense perfume,
with hints of red berries, together with spices and notes recalling
dried grapes. Grape varieties: Corvina 50% Corvinone 20% Rondinella 30% Food Pairings: Tradition recommends
typical Italian appetizers, pasta, rice and country soups, dishes
with truffle, grilled, roasted or braised red meat, poultry, roast
lamb, stewed, or saut d vegetables; hard and semi-hard cheese with
medium-long ripening, tasty but not strong. Very pleasant with rare
cooked meat.

Le Novaje
Tasting Notes: It is a dessert and meditation wine, it has intense perfume,
fruity when young, with hints of red fruit and underbrush, violet,
iris, spices, coffee and bitter chocolate. Grape varieties: Corvina 50% Corvinone 20% Rondinella 25% Oseleta 5% Food Pairings: All types of
cheese, even hard and mature; excellent with fresh and creamy types,
goat's and sheep's milk and marbled cheese; pastries in general,
short pastry, all types of biscuits (wonderful with Cantucci or
typical Italian carnival Frappe), baked cakes in general and fruit
tarts. Excellent on strawberries or sliced peaches. A wonderful
"meditation wine" to enjoy alone.
Amarone della Valpolicella D.O.C. Classico Vigneto
Le Balze
Tasting Notes: This wine ages for 32 months in barrique, it is caracterized
by a deep garnet red, generous body, intense, with evident hints
of almond, cherry jam, spices, and tobacco. Grape varieties: Corvina 50% Corvinone 20% Rondinella 25% Oseleta 5% Food Pairings: Tradition suggests
great dishes based on game, grilled, roasted or braised meat, roast
lamb or goat; slightly fat, tasty and mature cheese; excellent at
the end of a meal. It is perfect to be enjoyed alone in front of
fireplace as a "meditation wine", with a good book or
in pleasant company. The unusual combination with sweet-and-sour
flavours, the traditional dishes of Middle-East, Asian and Latin-American
cuisine is never disappointing.
Amarone della Valpolicella D.O.C. Classico Selezione
Corte Vaona
Tasting Notes: This wine ages for 24 months in barrique and 12 months in
bottle. Color is deep garnet red. Intense perfume with typical hints
of ripe red fruit and jam. Characteristics hints of spices, coffee,
bitter chocolate, tobacco and notes of goudron with ageing. Good
alcoholic taste with high extract, generous body, velvety, flavoursome
and persistent with hints of almond, cherry jam, spices and tobacco.
