Villa Cafaggio Description
Villa Cafaggio comprise 68 hectares in Panzano,
in the "Conca d'Oro" (golden basin) area of Chianti Classico.
The Conca d'Oro is blessed with a perfect microclimate, with a high
altitude of 400 meters and majority of south facing vinyards. There
are 40 hectares of vines at Cafaggio, aproximately 85% of which
are Sangiovese and the remaining 15% areCabernet Sauvignon.
Tasting Notes: This Chianti
Classico is elegant, with excellent structure and huge amounts of
very accessible fruit. Made from the Sangiovese clone best suite
to the terroir at Villa Cafaggio. It is aged for 12 months in traditional
Slavonian oak casks, contributing to its wonderful structure, which
is balanced by voluptuous fruit. A lovely bright cherry red. Spicy
cloves on the nose with a wonderfully refined black cherry and plum
fruitiness. Grape varieties: Sangiovese 100% Food Pairings: We suggest to seve at 19° C. Good with red and white
meats, pork, poultry and aged cheeses. Total production: 50,000 bottles Awards Won:
Tasting Notes: The Riserva is made exclusively from top quality Sangiovese
grapes grown on south facing slopes. We age the wine for 18 months
in French oak bariqques, followed by a further 3-4 months in the
traditional large Slavonian oak casks, and we do not release the
wine for a further 5-6 months after bottling to ensure that it is
in top condition. An intense dark red, there are firm ripe fruit
aromas with blackcurrant undertones on the nose. The palate is bursting
with deeply concentrated morello cherry flavour, with a backbone
of tannin giving the wine great concentration and ageing potential. Grape varieties: Sangiovese 100% Food Pairings: We suggest to seve at 19° C. Good with stuffed game,

Tasting Notes: This wine is produced using Sangiovese clones selected for
their slow steady growth and small, intense berries. The grapes
have been kept on the vine until mid-October. The San Martino is
aged in new small French bariques for 18 months. Aftrwards is stored
for further 5-6 months in bottle to make sure it is on top form
before it reaches the markets. Plum coloured, with juicy aromas
of blackberries and raspberries. Huge amounts of mouth-filling blackcurranty
fruit on the palate, beautifully integrated tannins and a fantastically
opulent texture. Grape varieties: 100% Sangiovese. Food Pairings: We suggest to
serve at 20° C. Good with red meat, pasta with game sauce, steak. Total production: 15,000 bottles Awards Won:
Tasting Notes: In 1986, 4,000 Cabernet Sauvignon vines were grafted onto
22 year old Canaiolo rootstocks at the Villa Cafaggio estate. Further
plantings were made in 1991 and 1995. Grapes for Cortaccio are grown
in 3 vineyards, making a total of 5 ha on the 40 ha Panzano estate.
The vines are pruned just as they are changing colour in August
(green harvest) resulting in a significant reduction in yield (maximum
of 1 kilo of grapes per vine) and far greater concentration.
The Cabernet Sauvignon grapes are the last to be picked at Cafaggio,
and are left to mature on the vines until the second half (sometimes
the end) of October. They are checked daily in order to pick at
the absolute peak of maturity. The wine is aged for approximately
18 months in 100% new 225l French oak. Grape varieties: 100% Cabernet Sauvignon. Food Pairings: We suggest to
serve at 20° C. Good with stuffed game, blue cheeses... or alone,
