Chianti is
an Italian wine producing region between Florence and Siena
in central Tuscany. The best wine comes from Chianti Classico
in the central part of the area.
Chianti Classico is a blend of four varieties. Sangiovese
is the most important, forming at least 75%, and imparting the
typical Chianti flavor.
Sangiovese's flavor predominates. This red grape produces
a wine with a bright ruby-red color. It has a spicy aroma of
wild berries. The flavor offers black cherry and raspberry.
It is a refreshing drink that can be complex and ages well for
up to ten years.
Brunello di Montalcino was invented, or codified, in 1888 by
Ferruccio Biondi-Santi, whose descendants continue to produce
brunello today. The wine is made from 100 percent sangiovese
grapes, the grape that dominates Chianti, but from a different
clone called sangiovese grosso or brunello.
The vineyards are situated on about 450 hectares in the classical
Valpolicella Hills area Northwest of Verona, which are mostly
concentrated in the town of Negrar. The most used system of
cultivation is the traditional PERGOLA system, with about 2,500-3,000
plants per hectare. The average age of the vines is 20 years.
The cultivation of the vineyard has among its primary objectives
the maximum possible degree of respect for nature: for this
reason, biological techniques are used, and pesticides are used
as little as possible.
The harvest is done entirely by hand, with many selections
for special wines, such as the Amarone, produced from single
vineyards to exalt its characteristics.
Amarone is the Veneto's principal collector's wine, and it
is built to last: Because of its high alcohol content, thick
tannins, and deep concentration, it is a wine typically aged
from three to six year before it is released. It is a unique
wine in that it is approchable when young but can also spend
twenty to thirty to years or more in bottle and still be rich
and satisfying when opened.
